5 Quick and Easy Egg Muffin Recipes

When you think of a muffin I guess you immediately think of a cake?  Well this is not a cake, I suppose it similar to an omlette served in the shape and size of a cupcake.  Super tasty and perfect for whenever you need a little snack, plus you can be creative and use any flavour combinations you fancy.  You can eat them hot after cooking or store in the fridge once they have cooled.  I've got five recipes that I have tried some savoury and some sweet but all delicious.

A simple combination but it tastes amazing, to make approximately 12 (depends how big you make them) of these these you will need the following ingredients:

  • 8 eggs
  • 100ml milk of your choice
  • Dessert spoon of Chia seeds
  • Half an aubergine copped into small cubes
  • Red Leicester cheese (personal preference on how much but I would say 30-50g grated)

To make these firstly line a muffin or cupcake tin with cases (I didn't and they stuck), then generously fill the cases with the aubergine and cheese.  Beat the eggs, chia seeds and milk in a jug and pour into the cases.  Place in the oven at 160 degrees C for 10-20 minutes until she the egg is cooked and has set.  You can eat them warm or leave them to cool and store in the fridge for when you need a little snack.

It really is as simple as that!

2) The Full English

You have the eggs so why not add bacon/ham, sausage, tomato, avocado, mushroom, beans or any other breakfast items you may fancy?  This is what I did and it worked brilliantly.

 

The following ingredients made me 12 of these

    • 4 eggs
    • 2tbsp chia seeds
    • 4-5 cherry tomatoes chopped up
    • 1/2 and avocado chopped up
    • Some bacon of cold ham chopped up
    • Mini cocktail sausages or and pre cooked sausage of your choice chopped

 

 

3) Goats Cheese, Beetroot and Spinach

These may not look the most pretty but I assure you the flavour combination is delicious!  To make approximately 6 (muffin size) of these you will need the following:

  • 3-4 eggs (the more you add the more set it will be as the beetroot and spinach add moisture)
  • 100ml milk of choice
  • 1 ball of cooked beetroot (approx 50g) chopped up
  • 50g Goats cheese chopped up
  • Small handful of spinach (you can use frozen which I did)
  • 1 tbsp spoon of chia seeds
  • Salt and pepper seasoning if you wish to add this 

I did this recipe slightly differently as I put the eggs, milk, spinach and chia seeds into a food processor and blended them together.  I then poured this into the lined muffin tin and divided the beetroot and goats cheese between the cases.  The tin went into the oven at 160 degrees C for 10-20 minutes until the egg was set.

4) Banana and Blueberry 

Here is my first sweet version, the delicious combination of banana and blueberry with a sprinkle of cinnamon to finish it off! To make approximately 12 cupcake sized you will need the following:

  • 6 eggs
  • 50ml milk of your choice
  • 1 large banana
  • 1 tbsp chia seeds
  • 2 large handfuls of blueberries, some chopped and some whole
  • Cinnamon to dust the top with 

This time I added the eggs, banana and chia seeds to the processor and blitzed until smooth before pouring the mixture into the lined tin and finally dividing the blueberries between the cases (adding more if you want to) and finally sprinkling a dusting of cinnamon over the top.  Finally bake in the oven at 160 degrees C for 10-20 minutes until the egg is set.  You could always add more cinnamon before eating if you wish to.

5) Apple, cinnamon and Raisin

These are my favourite, I have saved the best until last!  With the basic ingredients the same as the goats cheese, beetroot and spinach this makes approximately 6 (muffin sized):

  • 4 eggs
  • 100ml milk
  • 1 tbsp chia seeds
  • 1/2 tsp cinnamon
  • 1 small Apple grated
  • Handful of raisins

Blend the eggs, milk, chia seeds and cinnamon together in a food processor then divide between the muffin cases.  Divide the apple and raisins between the cases and bake in the oven at 160 degrees C for 10-20 minutes until the eggs are set then enjoy either hot or cold.

There is no set formula of ingredients for these so you can play around with the amount of eggs and also what ingredients you put in (if the ingredients hold more water add extra eggs).
