Chia baked egg and mash

Delicious creamy mashed potato with added goodness from chia seeds and spring onion, topped with baked eggs.  Sound like your kind of food then keep reading to find out how to make it, it's so simple and really easy to do.   

*1 1/2 tablespoons of chia seeds

*4-5 spring onions finely chopped

* splash of milk

*lump of butter

* Eggs (1 per person)

All you need to do is boil the potatoes in a pan until soft.  Once they are soft drain the water and mash the potatoes up, then mix in the chia seeds, spring onion, butter and milk (butter and milk amounts are your personal preference to make the mash as creamy as you wish).  Finally put your mash into a dish and create deep wells for your eggs to go into.  Once you have put the eggs on top, place into the oven at 160 degreesC and bake until the eggs are cooked- you can generally see they are done but if you are not sure poke the white with a skewer to check.  And there you have it a completed baked egg and mash ready to be dished up, I had mine with roast vegetables, Quorn sausages and a little sprinkle of cheese which was delicious and very filling (perhaps as I had a huge portion!).
