It's almost pancake day so what better than so ideas to make your pancakes super chia charged!
There are a few ways you could do this:
1) Give your favourite topping (whatever it may be, sweet or savoury) an extra sprinkle of chia seed goodness, or perhaps you
3) Mix a large spoonful of chia seeds into your batter before cooking
4) Finally you could make chia flour by grinding your seeds and using this as the flour for your batter, see recipe below.
You will need:
2.5 OZ of chia seed flour (put your seeds into a blender to grind them up, I used the nutri bullet with a special blade specifically for this job)
200ml milk of your choice
Then to make these you just need to put your chia seed flour into a bowl, make a well in the middle and crack the egg into the well then whisk it together slowly adding the milk. That is all you need to do to make the batter, it is thicker than normal pancake batter as the chia seeds actually thicken the mixture.
Lightly grease a hot frying pan and place large spoon dollops of the mixture onto it, push these down with the spoon to flatten then flip using a fish slice. When you flip them over you can squash them down a bit, these also need to be flipped a few times as they take a bit longer to cook but they are worth the wait!
This amount makes approximately 8 scotch size pancakes and once you are done you can top them with whatever you like, sweet or savoury. I tried them with the Chia nut butters and they were delicious. Why not share your favourite toppings with @ChiaCharge on Twitter or on the Facebook page?
