Chia squidgy 'malt style' loaf

A while back I was trying to make a cake using ground chia seeds as flour and replacing butter with sweet potato as I had heard using vegetables in cakes was actually quite nice.  The result however was more like a malt loaf and tasted nice but was certainly not what I expected!   After a few weeks of trial and error of the recipe I have finally come up with not one, but two versions which I am happy

To make this you will need the following ingredients:

*2oz of chia flour (ground chia seeds)

*1 medium sweet potato (cooked until soft and mashed up)

*3 tablespoons of raisins

*1 tablespoon of honey

*1 teaspoon of ground cinnamon

*1/2 teaspoon of ground ginger

*1 teaspoon of vanilla extract

* 1 beaten egg

It's so quick and simple to make this, all you need to do is mix the ingredients together in a bowl then squash down into a small loaf tin (I did 2 in 4x2inch silicone tins, you could do bigger but it will take longer in the oven), then place in the oven at 160 degrees C (fan assisted) and bake for 15-20 minutes or until firm to touch and a knife inserted comes out clean.  If you don't bake for long enough you could end up with a VERY squishy loaf, it still tastes good but the texture is a bit strange!

Please note when you mix the ingredients together it will become very thick and glue like, this is normal so don't worry.

My other recipe is exactly the same but I replaced the sweet potato with a large mashed banana to make a sweeter version and actually I think I prefer the banana one.

These are fantastic on their own or you could spread them with butter, jam, chocolate spread or the chia nut butters, there are so many options.  As an extra seal of approval my brother likes these and he is quite fussy, I know if he likes something it must be ok.
