A huge thanks to Anna - a Chia Charge fan for sending in her recipes that include the nutritious chia seed. Everybody loves a delicious slice of cake, why not try Anna's recipe and let us know your thoughts. Another plus - it's gluten free!
"The chia cake recipe - it’s amazing on so many levels, it’s healthy, packed full of goodness and most of all stays moist!"
4 tablespoons chia seeds, soaked in 1 cup of water for 15 minutes.
½ cup raw cocoa
1/2 Cup Olive Oil
5 medium to large eggs
1 cup (175g) almond meal
3/4 Cup Raw sugar, or you could use 3/4 Cup Honey - I didn’t use that much
1 teaspoon bicarb soda
1/2 cup cranberries and sultanas - I replaced the cranberries with dried cherries and they were even better
Preheat oven to 180C.
Line a spring form cake tin with non-stick baking paper.
Soak chia seeds and fruit in 1 cup of water for 15 minutes, stirring regularly. The seeds will absorb all the water and swell to form a gel.
Place all the ingredients in a bowl.
Whisk to combine well & break up any lumps
Pour into lined cake tin.
Bake in oven for 35-40 minutes or until it a clean skewer comes out from testing
Cool on a wire rack. Serve up and enjoy!
