CHOCOLATE CHIA PUDDING
If you like a chocolate mousse but want to avoid
processed and refined foods, this is a winner. It
is very filling and you can play with the flavours
and additions to make it your own.
1 ½ cups almond milk
1/3 cup chia seeds
¼ cup cocoa or cacao
2-5 tbsps of maple syrup
½ tsp cinnamon
¼ tsp sea salt
Add everything except the maple syrup to a bowl
and whisk vigorously to combine.
Let it rest in the fridge overnight or for at least 3-5
hours and it will reach a pudding like consistency.
Add to a blender and blend until it is smooth and
creamy. Add the maple syrup to taste.
Keep in the fridge for up to 3 days.
Top with whatever you want! I like a bit of yoghurt
as it is very rich, and a few berries.
