Ingredients:

  • 110g Greek yogurt

  • 1 egg, whisked

  • 85g maple syrup or honey

  • 1 tsp vanilla extract

  • 40g rolled oats

  • 30g crispies

  • 25g coconut flour

  • 10g chia seeds

  • ½ tsp baking powder

  • 40g chocolate chips

  • Pinch of sea salt

Method:

  1. Preheat your oven to 170°C (fan) or prepare your air fryer with baking paper.

  2. Whisk together the beaten egg, Greek yogurt, vanilla extract, and maple syrup or honey until smooth and lump-free.

  3. In a separate bowl, combine oats, crispies, coconut flour, chia seeds, baking powder, salt, and chocolate chips.

  4. Add the dry ingredients to the wet mixture, gently folding to combine. Don't worry if it appears too wet—allow the dough to rest for about 5 minutes.

  5. Spoon the mixture onto a baking tray lined with baking paper, roughly shaping each cookie into a circle.

  6. Feel free to sprinkle additional toppings like extra chocolate chips, coconut flakes, or sugar if desired.

Baking Instructions:

  • Oven: Bake for 12-15 minutes at 170°C until golden around the edges.

  • Air Fryer: Cook on a lined air fryer basket at 160°C for approximately 10-12 minutes, checking regularly.
