Base :
60g crushed soya crispies
72g melted salted butter
10g soft brown sugar
Cheesecake Topping:
80g white chocolate, melted and cooled
230g cream cheese at room temperature
2 tbsp icing sugar
Handful fresh raspberries (plus extra for decoration)
Prepare Base :
Crush the soya crispies in a bag until finely crumbled.
Melt the salted butter, then mix thoroughly with the crushed crispies.
Stir in the soft brown sugar.
Press evenly into ramekins or muffin cases and refrigerate.
Prepare Cheesecake Topping:
Melt the white chocolate and let it cool slightly.
Beat cream cheese and icing sugar until smooth.
Quickly incorporate the cooled white chocolate until well blended.
Gently stir in fresh raspberries.
Spoon this creamy mixture over your chilled bases and smooth the tops.
Decoration: Sprinkle additional fresh or freeze-dried raspberries, chopped pistachios, or crushed amaretto biscuits on top for an extra layer of delicious texture and vibrant color.
