    If you like a chocolate mousse but want to avoid processed and refined foods, this is a winner. It is very filling and you can play with the flavours and additions to make it your own.

    Ingredients

    1 ½ cups almond milk (or other plant milk of your choice)
    1/3 cup chia seeds
    ¼ cup cocoa or cacao
    powder
    2-5 tbsps of maple syrup or agave nectar
    ½ tsp cinnamon (optional)
    ¼ tsp sea salt

     

    Method

    1. Add everything except the maple syrup to a bowl
    2. and whisk vigorously to combine.
    3. Let it rest in the fridge overnight or for at least 3-5
    4. hours and it will reach a pudding like consistency.
    5. Add to a blender and blend until it is smooth and
    6. creamy.
    7. Add the maple syrup to taste.
    8. Keep in the fridge for up to 3 days.
    9. Top with whatever you want! I like a bit of yoghurt
    10. as it is very rich, and a few berries.
