Refined, sugar free, 4-ingredient cookies

A nice cup of tea and a sit down is obviously one of life’s great pleasures. Whether you’re the PG Tips, Earl Grey or heck, even peppermint type, taking a few minutes to enjoy a warm beverage can really enhance your day. An even bigger debate is what biscuits to have as an accompaniment. Although there’s a lot to be said for a few chocolate digestives to dunk, when this is a daily habit, you might find yourself with a tighter waistband. So, as an alternative (and a fantastic fuel during training too), knock up a batch of these instead.

Ingredients

4 tablespoons Chocolate Nut Butter

4 tablespoons of honey

1 ¼ cups of ground almonds

A handful of dark choc chips or cacao nibs

Method

  1. Preheat your oven to 180c or 350f, and line a baking tray with parchment.
  2. Mix the nut butter and honey until combined, then add the almonds and get your hands in. Mix it up until you get a dough. Add the chocolate and work it in with your hands.
  3. Shape your cookies into flattened balls. This makes about 9 decent sized cookies or about 12 if you’re more delicate.
  4. Bake for about 10 minutes until they’re lightly coloured.
  5. Allow to cool and get dunking.
