These Mini Pizza Bites are exactly what you need! Compact, tasty, and bursting with delicious, savoury flavours, they're perfect for satisfying cravings mid-run or during a long hike. Easy to carry and delightful hot or cold, they'll quickly become your go-to outdoor snack!
3 eggs, whisked
100g cottage cheese
145g plain flour
100g grated mozzarella
10g finely sliced spinach
30g diced sun-dried tomatoes
60g diced chorizo or pepperoni
20g tomato paste (add more if desired)
50g soya crispies
Salt and pepper, to taste
Preheat your oven to 170°C (fan) or line your air fryer drawer with baking paper.
Combine whisked eggs with cottage cheese and tomato paste, mixing until smooth.
Add herbs such as oregano or basil, a pinch of chilli flakes, and season well with salt and pepper.
Stir in flour until incorporated.
Mix in diced sun-dried tomatoes and chorizo or pepperoni.
Add mozzarella, spinach, and soya crispies, mixing thoroughly.
Spoon the mixture onto a lined baking sheet or air fryer drawer in small blobs. Gently shape each bite and sprinkle with extra cheese or your favorite toppings if desired.

Oven: Bake at 170°C for 25-30 minutes or until golden and firm.
Air Fryer: Cook at 160°C for 12-15 minutes or until crispy and golden.
Allow to cool slightly before packing. These snacks are equally delicious warm from the oven or eaten cold on the trail.
Veggie Delight: Replace chorizo with mushrooms, bell peppers, or olives for a vegetarian twist.
Spicy Kick: Add jalapeño slices or extra chilli flakes to ramp up the heat.
Extra Protein: Sprinkle some cooked chicken or turkey for additional protein.
